A crispy shiitake bacon sandwich uses thinly sliced shiitake mushrooms roasted or pan-fried into chewy, smoky "bacon" strips that mimic pork bacon's texture and savoriness. Shiitake caps get tossed in oil, tamari or soy sauce, maple syrup, liquid smoke, smoked paprika, and black pepper before crisping; assemble on toasted bread with lettuce, tomato slices, avocado cream, or vegan mayo.
